Healthy One Pan Dinner for Large family

This easy Maple Apple Roast Chicken recipe is likely to have your kiddos eating their veggies and asking for more. With a healthy maple syrup glaze and apples mixed in with the veggies, it’s perfect for the fall season or anytime!

A whole chicken is optional here, you can use any cut of the chicken your family prefers (just make sure to adjust the time the meat you use needs to cook). But whole chicken is so easy and has MANY uses in our kitchen. Besides, what mama doesn’t LOVE having leftover chicken to use for future meals.

After dinner, we use the bones of the whole chicken to make bone broth (which will usually turn into a great soup base for lunch throughout the week). If there is much meat left, we will use it for adding to cheese quesadillas, grilled burritos, chicken salad, topping salads or sandwiches!

Now that the boys are hitting growth spurts, I am finding I have to bake 2 chickens (just as easy as 1 honestly) if I want to have anything more than bones left over! Not complaining, I am SO thankful I get to be the one feeding and caring for these hungry little blessings!

You will need:

  • 1 whole (free range/organic preferred but optional) chicken
  • 3 medium sweet potatoes
  • 3 small or 2 large apples
  • 1 large onion
  • 2 cloves garlic
  • 4 Tbsp Evoo or other oil/fat of your choice
  • 1/2 tsp Rosemary
  • 1 tsp Sage
  • 1 tsp Thyme
  • 1/4 cup Maple Syrup
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • Bread of your choice: serve with butter.

How to Make Maple Apple Roast Chicken Dinner:

  1. Choose your bread product: I had some homemade sourdough bread, so I just served it with butter. But you could also choose to do another bread of your choice. My hot dog bun recipe can make rolls too! Just roll them out into balls instead of logs and follow the recipe. top with some butter for color & flavor and boom, homemade dinner rolls in 1 hour start to finish.

2. Dress the chicken: turn oven on to 425F. Put oil & seasonings on the chicken.

3. Chop and dress veg & apple mixture: peel and roughly chop your apples and sweet potatoes into quarters and slice onions.

4. In a bowl mix up your mixture of maple syrup, EVOO, herbs, salt & pepper. Add veggies & apples to bowl & toss to coat evenly.

5. Add veggies and apple to the chicken pan. Pour over the chicken so it gets coated with the maple syrup mixture as well. Arrange veggies flat on the pan.

6. Bake for 1 hour.

7. Chicken should be 165F internal temp when done and veggies tender.

8. Serve with buttered bread if desired.

9. Enjoy!

Whole Chicken FAQs:

  • Is it actually cheaper to buy a whole chicken? Yes!
  • How long does it take to cook a whole chicken? Usually an hour at 425F is sufficient for an average size chicken. Think 15+minutes per pound.
  • How many people will one whole chicken feed? My family of 7 has ate one chicken (around 5 lb) (with sides) up until this point. I like to have leftovers for other easy meals, so we eat 2 chickens now for that purpose.

My family enjoys whole roasted chicken in so many ways, but this is one of our favorite recipes to enjoy specifically in the fall! Maple syrup, the end of season herbs from our potted garden, and of course the apples! Delicious fall flavors for all to enjoy! I hope your family enjoys this simple meal as well.

Ingredients

  • 1 whole chicken free range/organic preferred but optional
  • 3 medium sweet potatoes
  • 3 small or 2 large apples
  • 1 large onion
  • 2 cloves garlic
  • 4 Tbsp Evoo or other oil/fat of your choice
  • 1/2 tsp Rosemary
  • 1 tsp Sage
  • 1 tsp Thyme
  • 1/4 cup Maple Syrup
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • Bread of your choice: serve with butter.

Method

  1. 1. Preheat the oven and prep the chicken: turn oven on to 425F. Open up the chicken (do this somewhere near the sink and a trash can with your pan on the counter nearby), remove any bags of giblets on the inside of the chicken. Place the chicken on rimmed sheet pan.
    3. Chop and dress vegetable and apple mixture: on a cutting board, peel and roughly chop your apples and quarter the sweet potatoes and slice onions.
    4. In a bowl mix up your mixture of maple syrup, evoo, herbs, salt and pepper. Add veggies and apples to bowl. Toss to coat evenly.
    5. Add veggies and apples to the chicken pan by pouring them over the chicken so it gets coated with the maple syrup mixture as well. Spread veggies out flat on the pan.
    6. Bake for 1 hour.
    7. Chicken should be 165 when done and veggies tender.
    8. Serve with buttered bread if desired.
    9. Enjoy!

Notes

  • Pick any meat left on the chicken and save it for lunch the next day or within the week. Make quesadillas, burritos, chicken salad or whatever you fancy !
  • Save the bones! Put the entire contents of what is left on the sheet pan (minus the meat you saved) in the instant pot with 8 cups of water and cook for 90 minutes on high pressure. BOOM. Homemade bone broth! Add salt, pepper, onion, celery etc per your taste if you want a more flavorful broth for sipping. But just leaving it plain will make for a perfectly usable unsalted chicken broth/bone broth for recipes like soups, gravy, etc–mine gels in the fridge revealing a quality, collagen rich, gut healing broth!
