- 1 cup milk
- 1 cup Spring Water
- 1/2 cup butter, coconut oil or avocado oil
- 3 Tbsp honey
- 2 TBsp instant dry yeast
- 1 tsp salt
- 5 cups All Purpose Flour (organic preferred) ( OPTION: IF using Fresh Milled: use 2 cups Hard white wheat berries & 3 cups all purpose flour)
1. Warm Milk, if using butter or coconut oil, melt it in the same pan with the milk. If it gets hotter than 115 just stick it in the fridge to cool a bit so you don't kill the yeast. Stick your finger in it, if it's too hot to keep your finger in, it's too hot for the yeast. Use a thermometer if you doubt to double check (temp somewhere between 105-115 degrees F should be good!)2. Add the melted mixture to a bowl with the 1 cup of water, honey, salt and yeast. 3. Let the yeast "bloom" for a minute. You'll notice the frothy foam forming on top of the water. That's what the yeast "blooming" looks like.4. Add liquid mixture to the 5 cups of flour. Using a dough hook on the mixer or a spoon and begin to bring the dough together. It will be sticky at first. 5. Once dough comes together let it sit for about 10-15 minutes for a quick first rise. 6. Next roll it out to about 1/2" thickness. 7. Using a large mouth jar, cup, cookie cutter or canning ring cut out the pieces of dough and roll into a small log shape. These will Double in size so go smaller than you think. 8. Place on a parchment lined (or well greased) baking sheet (you may need 2 baking sheets to fit them all ). 9. Let them rise about 25-30 minutes. 10. Meanwhile, preheat your oven to 375F. After the 25-30 minute wait is up, bake them for about 10 minutes or until the internal temp is about 190+F. 11. Slice with a bread knife 3/4 of the way, careful not to cut into the bottom. 12. Fill your bun with a roasted weenie, chili/sauce, favorite toppings and enjoy!
- If you don't have honey, use sugar as a substitute.
- You can freshly mill hard white wheat berries and sub 1:1 what the recipe calls for flour per cup (I have never done more than half freshly milled and half all purpose. If you try 100% whole grain I'd love to know how it turns out!)
- You can freeze as soon as they're cool enough to touch in a freezer ziplock bag and they'll last for 3 months or more!
- Experiment and make pizza, flat bread, rolls, hamburger or hoagie buns and cinnamon rolls with this recipe! It's versatile !
